So Thankful

Praising the Lord!

I was definitely in His grip last Tuesday.

We are still waiting to find out if the car I was driving was totaled. The other car was totaled.

It really makes me think how fortunate I am that I'm.

These pictures do not even do the accident justice, we saw the cars at the junk yard a couple days later and it is much worse. It is such a blessing, he and I both came out without injuries....no cuts, nothing broken, just whiplash and bruised up. I'm so thankful that it wasn't worse.

So this week, give thanks in everything, and tell the people close to you that you love them, because life can change in a blink of an eye.

A Night to Remember

Prom night!! Even though I'm homeschooled, I have the privilege to go to a homeschool prom. It is an amazing set up, over 1,000 parents volunteer to throw such an amazing prom night for all of us! This night was so much fun, I was able to see a lot of my friends dressed up, and dance the night away! :) Of course, I went with Beau! :)

The beautiful corsage!

It is incredibly hard to take any "good" photos of me and Beau, because we are so crazy and cannot seem to stay focused. We did manage to get a few...

My Best Friend

Hello Everyone! I would like you to meet my best friend, Jif. I share my snack time and most of my dinners at work are with him. He is my biggest weakness, and really knows how to get me. :)

One of the many ways I like to spend time with Jif, is with apples. I usually eat an apple a day. Which is ironic because I have been getting sick lately. hmm.. I found out that Jif is really delicious when I put him in a bowl and melt him for 10-15 seconds and so he can just be poured over the apples! Yumm.

Today, I made up a recipe. Peanut butter and Chocolate chip cookies! Lets just say they were Devinne. I used a regular chocolate chip recipe and added around a 1/2 cup of peanut butter. It was pure bliss.

My Valentines Day

This was my very first Valentines day to have a "Valentine".. Well other than my dad. It was amazing. I am normally not a huge fan of Valentines day, I think its a day of mush and a waste of money. But this year, it was different. Beau delivered roses to my class, the goal was to embarrass me... It was successful!
Meet Beau-Bear, he is a one of a kind Build of Bear, made with love by Beau.

Beau- Bear is a football player!!
Beau-Bear came with all this and a box of chocolates! :) Thank you Beau!

Another Winter Day

Today I was stuck inside for the day, because of the ice we got last night. So I spent my day, baking cookies, having a cup of hot tea, and reading a book! :) Redeeming Love, is one of my all time favorite books. Francine Rivers is an amazing author. I honestly can say I do not like to read, but I could not put this book down. It was fabulous!
I made Oatmeal Scotchies...delicious! The recipe is very simple.
3/4 cup brown sugar
3/4 cup sugar
1 cup butter
2 eggs
1/2t cinnamon
1/2t salt
1t baking soda
1t vanilla
1 1/4 flour
3 cups oatmeal
butterscotch morsels
Mix together and bake at 350, for 8-10 minutes.

Just for Fun

Earlier last week, when Texas was having its Winter Blizzard, I decided to have a photo shoot!Because of mine and Beau's fun personality, it was a real struggle to get a few good pictures. :) But this is what we came away with.

Come on Tori, focus!

Thanks to my poor, cold mom, for having patience with us! :)

Chocolate and Peanut Butter Cupcakes

One Saturday afternoon, my mom and I were watching Ultimate Cakeoffs. A show about talented people making amazing cakes. This episode was about cupcakes.. So what did I do? I made cupcakes. I looked through a few cookbooks, not finding what I needed so I decided to create one myself. I just used a white cake recipe and just substituted the white for cocoa powder. Then I found a buttercream frosting and put a few tablespoons of peanut butter in it. (I do not have the exact amount, because of my lack of measuring.) They were delightful! Very moist and for a fancy touch I sprinkled chopped up chocolate bar on top. :)
